SECOND SATURDAYS

A Taste of our Little Wine Shoppe

Something new! On the second Saturday of each month, we will open our lounge for a very casual tasting of a variety of retail wines. Some of these wines will be from our cellars, some will be wines we bring in just for this tasting. All of the wines will be available for retail purchase, with discounts for case purchases.

There will be a minimal 'per taste' charge for each wine, so stop by between 12:30 to 2:30 on the second Saturday of each month and sample wines for retail purchase.

BASTILLE DAY

French Independence Dinner!

Bastille Day, the French national holiday, commemorates the storming of the Bastille, which took place on 14 July 1789 and marked the beginning of the French Revolution. The Bastille was a prison and a symbol of the absolute and arbitrary power of Louis the 16th's Ancient Regime. By capturing this symbol, the people signaled that the king's power was no longer absolute: power should be based on the Nation and be limited by a separation of powers.

Chef Richard has just returned to Columbus from his family home in Lyon, France. He will be preparing a delectable French four course Dinner to serve on this day of French Independence

RECIPES FROM RICHARD

Smoked Salmon Spread
(makes about 1 1/2 to 2 cups spread)

A satisfying snack after a long day's hunt, or an elegant addition to a party buffet. Use this spread on slices of hot French bread straight from the oven.

1/2 cup white wine
4 tablespoons shallots, thinly sliced
4 ounces fresh salmon, bones and skin removed
6 ounces smoked salmon, cut into very fine strips
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh Italian flatleaf parsley
3/4 cup unsalted butter, room temperature
salt and freshly ground pepper to taste

  1. Add the wine to a saucepan and bring to a boil. Add the shallots and the fresh salmon. Poach for 2 minutes, then remove the pan from the heat, cover, and set aside for 5 minutes more.
  2. Drain the poached salmon and the shallots from the wine and set aside to cool completely, Discard the wine.
  3. In a mixing bowl, combine the smoked salmon, the poached salmon with the shallots, the chives, parsley, and soft butter. Fold the ingredients together until the mixture is smooth and spreadable. Season to taste with salt and pepper and place in a decorative mold or airtight container. Served chilled.
